Son of an itinerant distiller, Laurent Cazottes has learnt to put into practice a traditional know-how with respect for the environment. Laurent Cazottes intends to apply biological methods of production and even biodynamic agriculture in his estate which is located in the Tarn department. He has planted 400 pear trees, 80 Green Gage plum trees and vines of Mauzac, of Prunelard and of Folle Noire.
All these fruits overmatured for more than a month are picked one by one in order to obtain the best concentration of sugar and aromas. The bad parts (stalks, calyxes, pips, stones or scabs) are taken out manually to keep the savour of the fruit.
Among all these fabulous eaux-de-vie which are to be served cool or chilled, you can find some Goutte de Poire Williams (shrivelled pear) or some Goutte de Reine Claude (shrivelled plum). With the slow and meticulous work of Laurent Cazottes, only natural spirits of high quality and full of aromas are produced.
