Seeking the highest quality, Jacques Bally took over the Habitation Lajus plantation (Martinique) in 1919 to restore the house and the distillery. He decided to buy the surrounding plots of land to recreate the old plantation.
He rapidly noticed that the rum stored in barrels took an amber colour and exceptionally delicate fragrances. The “paille rum” (straw-coloured) achieved great success in the Caribbean. From that time on, Jacques Bally stored a part of his production in barrels to age for several years.
The triangular and square-shaped bottles were commercialised in the thirties. His old rum then became identifiable all around the world.
Rum is either distilled with fermented molasses or sugarcane juice. Light rums rest for a minimum of 3 months whereas golden and dark rums age in American oak casks for at least 3 years. These rums are smooth, very pure and gain complexity with time.
