Unlike wine for which grape variety is essential ; the kind of sugar cane chosen to make a rum is not really important.
On the other hand, fermentation, distillation, maturation and blending are crucial stages in the rum making process.
All these elements give birth to many rums, all different from each other, coming from all over the world…

| BRESIL
Here, the rum is called « cachaça ». Brazilian’s rums are made from molasses and offer a nice flowery flavour while being light in alcohol.
| GUATEMALA
As many rums from Central America, the rum from Guatemala is made from molasses. This rum is drunk young but offers a nice flowery taste.
| MARTINIQUE
Martinique is known as a specialist of farm rum, but produces as well a wide range of rums, from white to amber ones ; strongly flavoured but still having a nice delicacy of taste. Martinique also have is AOC, a guarantee of origin and quality in a production which does not know much rules (or fewly controlled).

| DOMINICAN REPUBLIC
The Dominican Republic has given birth, with Cuba, to the kind of rum called « latino » or « ron ». Light in alcohol, they are perfect to prepare cocktails while being very interesting after maturation.
| REUNION
The island has 3 working distilleries. They all use column stills, producing very elaborated rums.
| TRINIDAD
A great variety of rum is produced here, distilled in multi column stills. From the youngest to the oldest ones, all rums are of a very high quality.
| VENEZUELA
Rums made in Venezuela are pretty similar to the ones produced in St Domingue, Cuba or Porto Rico. They distinguish themselves by their ageing in « solera ».
