In the South of Carcassonne, the appellation of Limoux is situated in the Languedoc, where the altitude varies from 100 to 300 meters. This appellation is divided between four main terroir categories. Their soils are composed of gravels, sandstone or molasses according to the geographic position of the vineyards. In this region, Mediterranean climate and oceanic influence constantly cross each other in the foothills of the Pyrenees thanks to winds from the west.
Chardonnay is vinified and ages in oak barrels only. The Toques et Clochers range (its name comes from an auction; some of the funds raised are put towards the restoration of the church bell towers in the villages within the Limoux appellation) was created by the cooperative cellar Vignerons du Sieur d’Arques.
Tradition, experience, modernity and rigour are their key words. The Sieurs d’Arques lay stress on food safety (traceability), protecting the environment and guarantees of quality (qualitative pruning, manual harvests, gentle and progressive extraction, maturing in casks).
