Property of the Pennautiers since 1620, then of the Lorgerils after a marriage, the Château de Pennautier was built in the North-West of Carcassonne. Nicolas and Miren de Lorgeril, winegrowers above all, do their utmost to preserve the family tradition of great wines. Having adhered to the principles of reasoned agriculture, both of them are very close to the terroir of their domaine whose soil is composed of clay and limestone of garigues. Certified Terra Vitis, their vineyards, facing south, are located on the slopes of the Montagne Noire.
Cabardès, the only appellation to associate in equal proportions Atlantic varieties (Merlot, Cabernet, Cot) with Mediterranean varieties (Shiraz and Grenache), is the result of two climatic influences on the same vineyard. In search of harmonious tannins, maceration (30 to 35 days) and aging in oak barrels (8 to 24 months) are long.
