Some geography and history 
The Maury appellation is produced in the North-East of Perpignan, between the Mediterranean coast and the Pyrenees. It spreads over 1700 hectares between the Corbieres mountains and the Pyrenean foothills.
This region, opening to Spain and the Mediterranean, is best known for its rich history and Cathar castles. It is also an unavoidable crossroads for wine lovers who want to discover great wines produced in Roussillon, particularly Mas Amiel whose history began at the end of the 19th century...

The Maury Terroir 
We all know that to produce a great wine, the vine must suffer. This is the case in Maury and especially for Grenache. This grape variety grows well in this region which meets all the climatic conditions needed by this vine:
· The dry and poor soil is composed of schists which absorb heat during the day-time hours and then transfer it back to the vines at night.
· The climate is extreme with freezing winters and winds blowing from the East and scorching summers with hot winds coming from Spain.
Under these conditions, there are very few clouds. Indeed, this region benefits from no less than 260 days of sun per year.

Mas Amiel’s Philosophy and Style 
Mas Amiel is a vineyard just outside the village of Maury. Olivier Decelle took over Mas Amiel in 1999 and subsequently, the domain has changed completely.
Led by their respect for the consumer and the vine, they have a policy of culture raisonnée de la vigne (reasoned grapevine culture). In essence, this means that they strive to respect the environment by avoiding the use of artificial fertilizers, chemical weed-killers and insecticides. Additionally, the vines are hand-trimmed and the grapes hand-harvested. Traditional methods have been progressively replaced by the use of organic compost and by farming techniques which help the vine develop properly and protect itself from its natural enemies.
The philosophy of Mas Amiel could be summed up in few words: observation, respect for natural elements and implementation of biodynamic cultures with the aim of guaranteeing a healthy and natural produce to the consumer…

About vin doux naturel... 
Vin doux naturel are one of the traditional characteristics of Maury. Their origin dates back to the 13th century when Arnaud de Villanova, a doctor and philosopher, managed to obtain a naturally sweet wine thanks to a process he discovered called mutage, in which fermentation is stopped by adding alcohol to the must during the vinification. This process allows the wine to keep more natural grape flavours and a greater proportion of sugar as the yeast action is halted.

The vin doux naturel of Mas Amiel can be described in the following way:
· Vintages which intensely express fresh and grapey fruit flavours....
· Grenache said "oxidised" which age in outdoor glass cylinders for a year before being transferred into large oak barrels to age for several years.
For these wines numerous pairings can be found, especially chocolate cakes, coffee and walnuts.
More audacious, these wines will intensify the flavours of a blue-veined cheese (roquefort) or a pan-fried foie gras...
It is also important to know that Mas Amiel produces wonderful Muscat de Rivesaltes, as well as a beautiful range of Côtes du Roussillon, that puts it at the top of the wines made in Roussillon...
