Pierre Callot
This small estate, founded by Pierre Callot, is located in Avize, Côte des Blancs, in the South of Epernay. Chardonnay, the unique variety planted by Pierre Callot, produces light white wines which are perfect in making sparkling wines. Thierry, his son, has taken over the family estate. Like his father, Thierry applies traditional methods while simultaneously adding some modern touches in order to produce Champagnes of the best quality.
Champagnes are bottled at least one year after the harvest. During that period, they slowly age in oak casks. The prise de mousse (capturing the sparkle) occurs in the sealed bottle, the same which is waiting at your table. The bottle is then placed upside down in a holder at a 75° angle so that the dead yeast cells are forced into the neck of the bottle and are subsequently removed.
