THE WINERY
The Domaine William Fèvre, with its 48 ha, has an impressive number of plots in the best Chablis terroirs, in both Premiers and Grands Crus. It possesses a unique diversification of terroirs. Its soils, rich in minerals and in oyster shell fossils, are composed of kimmeridgean blue marl and limestone. The vines (Chardonnay) are on average 35 years old.
William Fèvre was among the leaders in defending the high quality of the wines of Chablis and their terroirs. He managed to draw the best out of the characteristics of each parcel in order to produce Chablis of an exceptional authenticity. Having no heir, the estate was overtaken in 1998 by an old family from Champagne, the Henriot family, who has been carrying on Fèvres’ policy.
No matter the appellation or the vintage, every thing is done to produce whites of great quality: manual harvests, fruit selections and pressing with short skin contact time. Fermentation and aging even take place in oak barrels for some vintages. With such precautions, it is not surprising to obtain rich and fresh wines, of a great purity and with scents of minerals and herbs.
