Located in Preignac, in the heart of the Sauternes appellation, Clos Dady is a small and charming estate with 6 hectares of vines. The Ciron, a cold tributary of the River Gironde, creates autumn mists which bring the moisture required for the botrytisation of the grapes.
Catherine and her husband, Christophe Gachet are driven by a mutual passion for wine. She used to be a press attaché and Christophe a dental surgeon. She now takes care of the vinification whereas he looks after the vines. Born into a winemaking family, she decided to go back to her roots and to take the best from traditional know-how combining it with new technologies.
Sémillon, Sauvignon and Muscadelle vines boast an average age of 45 years. The 16 plots with their soils of clay and gravel are cultivated in harmony with nature . Grapes are picked one by one and the harvest lasts at least two months. The yield is two to three glasses of wine per vine plant. Manual and hydraulic vertical presses, barrels and tiny stainless steel vats make it possible to craft each plot separately in order to have a greater flexibility for the final blending. The wine ages between 18 to 36 months.
As a stylish aperitif or with Asian Cuisine, Clos Dady is the symbol of patience, know-how and respect for the environment.
