	THE WINERY

	Although Château Guillemin La Gaffelière is a very discreet family estate, it produces one of the best Saint-Emilion Grand Cru wine, which will marvelously accompany our most refined dishes. The grape varieties are comprised of Merlot Noir (62%), Cabernet Franc (25%), Cabernet Sauvignon (10%) and Malbec (3%). These vines are on the average 30 years old and grow on limestone and clay soils In spite of a very classical appearance, this wine, which has a very good aging potential, is really modern. The terroir is remarkably reflected thanks to the total banishment of weedkillers, a working of the soil in harmony with the seasons and a completely manual harvest.
