| THE WINERY  | |

Winegrowers in Ammerschwihr, Alsace, since 1770, the Binner family owns 6 ha of vineyards, facing South South-East. Some of their plots are located on slopes or terraces which offer better conditions for the vines.
To protect consumers, their terroirs and their vines, no chemical herbicide or fertilizer is used. Five noble varieties (Riesling, Muscat, Tokay Pinot Gris and Gewurztraminer for the whites and Pinot Noir for the reds) benefit from their natural and traditional viticultural methods. From their various Alsatian varieties and terroirs, 15 different cuvées are produced every year. Vines of some parcels are older than 60 years old and nearly half of them are older than 35. Their average yields are very low owing to their top-quality approach (55% of the volume officially allowed). Harvests are exclusively manual in order to select noble rot infested grapes for some vintages. Wines are bottled without being previously filtered and the aging on lees lasts eleven months in oak barrels that are made from hundred-year old trees. Both of their Crémants (sparkling wine) rest sur latte for a minimum of 4 years. As for their eaux-de-vie, they are traditionally produced from fruits of their estate and age many years in their cellars.
